Lentil stew





INGREDIENTS


1 Tbsp coconut oil
2 yellow onions, minced
4 cloves garlic, minced
1 Tbsp minced ginger
4 stalks celery, diced
1 Tbsp curry powder
1 Tbsp turmeric
1 tsp cumin
1 tsp salt
½ tsp pepper
1 cup red lentils
1 cup green lentils
1 can lite coconut milk
1 28 oz can crushed  fire roasted tomatoes
2 cups vegetable broth
6 Tbsp lime juice


INSTRUCTIONS


    1.   Add all ingredients to Instant Pot.
    2.   Place lid on Instant Pot and make sure valve is set to seal
    3.  Press the pressure cook button and set to high.
    4. Cook for 5 minutes.  Instant Pot will take about 10-15 minutes to come to pressure then pressure cook for 5 minutes
    5. Do a quick release of the pressure on the Instant Pot by flicking the switch at the top with a spooln.  Open the lid when pressure gauge has dropped and the lid opens easily.
    6. Add lime and mix
