INGREDIENTS
- 1 1/2 cups unbleached all-purpose flour
- 3 tablespoons cane sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- Pinch cream of tartar
- 1 tablespoon plus 1 teaspoon lemon zest
- 2 tablespoons vegetable oil
- 1 1/3 cups buttermilk
- 1/8 teaspoon vanilla extract
- 2 large eggs, separated
INSTRUCTIONS
- Mix together dry ingredients
- Add lemon zest, milk, vanilla, oil
- Separate eggs and add yolks
- Whip egg whites and fold into batter.
- Add blueberries while cooking
