Soba Noodles with Peanut Sauce


INGREDIENTS

1/3 Cup smooth peanut butter
1/2 Cup finely chopped scallions
1/4 Cup rice vinegar
2 Tablespoons reduced-sodium soy sauce
1 Large clove garlic, minced
1/2 Teaspoon ground red pepper (cayenne)
3/4 Pound soba noodles (Japanese buckwheat noodles)

INSTRUCTIONS


  • 1. In a bowl, mix peanut butter with 1/2 cup boiling water until smooth.  Stir in scallions, vinegar, soy sauce, garlic and ground red pepper; set aside.

    2. In a large pot of boiling salted water, cook noodles until just tender, about 3 minutes.

    3. Drain the noodles and transfer them to a serving bowl.  Pour on the reserved peanut sauce and toss to combine.  Serve hot or at room temperature.
