INGREDIENTS 1 1/2 cups unbleached all-purpose flour 3 tablespoons cane sugar 1 teaspoon baking powder 1/2 teaspoon baking soda 1/2 teaspoon salt Pinch cream of tartar 1 tablespoon plus 1 teaspoon lemon zest 2 tablespoons vegetable oil 1 1/3 cups buttermilk 1/8 teaspoon vanilla extract 2 large eggs, separated INSTRUCTIONS Mix together dry ingredients Add lemon zest, milk, vanilla, oil Separate eggs and add yolks Whip egg whites and fold into batter.
