INGREDIENTS
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 1/2 cups uncooked brown or green lentils, rinsed and drained
- 3 cups vegetable stock
- 2 tsp fresh thyme or 1 tsp dried thyme
- 1/4 cup red wine
- 1 10-ounce bag frozen mixed veggies: peas, carrots, green beans, and corn
INSTRUCTIONS
- Sauté onions in instant pot
- Add garlic and cook for 1 min
- Add remaining ingredients
- Cook on high for 8 minutes
- Add veggies after opening and let sit for a few mins
