Lentils


INGREDIENTS

    • 1 medium onion, diced
    • 2 cloves garlic, minced
    • 1 1/2 cups uncooked brown or green lentils, rinsed and drained
    • 3 cups vegetable stock
    • 2 tsp fresh thyme or 1 tsp dried thyme
    • 1/4 cup red wine
    • 1 10-ounce bag frozen mixed veggies: peas, carrots, green beans, and corn

INSTRUCTIONS

    1. Sauté onions in instant pot
    2. Add garlic and cook for 1 min
    3. Add remaining ingredients
    4. Cook on high for 8 minutes
    5. Add veggies after opening and let sit for a few mins
