Orange cake (Passover)

INGREDIENTS

    • 9 eggs separated
    • 2 1/4 cups almond flour
    • 2 cups sugar
    • 1 tablespoon orange extract
    • 1 1/2 teaspoons baking powder
    • 3/4 teaspoon kosher salt
    • 3 navel oranges
    • 1 tablespoon lemon juice
    • 1/4 cup powdered sugar

INSTRUCTIONS

    1. Lightly dust spring form pan with almond flour
    2. Separate eggs
    3. Beat egg whites until stiff
    4. Beat egg yolks and then Mix in sugar, almond flour, baking powder, salt and orange extract
    5. Juice navel oranges and add juice to batter
    6. Pour into spring form pan.
    7. Bake at 375 degrees on convection for 40 minutes
    8. When cool, glaze with 1 tablespoon lemon juice whisked into ¼ cup powdered sugar
    9. Top with raspberries
