INGREDIENTS
- 9 eggs separated
- 2 1/4 cups almond flour
- 2 cups sugar
- 1 tablespoon orange extract
- 1 1/2 teaspoons baking powder
- 3/4 teaspoon kosher salt
- 3 navel oranges
- 1 tablespoon lemon juice
- 1/4 cup powdered sugar
INSTRUCTIONS
- Lightly dust spring form pan with almond flour
- Separate eggs
- Beat egg whites until stiff
- Beat egg yolks and then Mix in sugar, almond flour, baking powder, salt and orange extract
- Juice navel oranges and add juice to batter
- Pour into spring form pan.
- Bake at 375 degrees on convection for 40 minutes
- When cool, glaze with 1 tablespoon lemon juice whisked into ¼ cup powdered sugar
- Top with raspberries
- Very moist and absolutely delicious and even better the next day!
